Creamy One Pot Pasta
I have really enjoyed my Pampered Chef Cookbooks. This is one of my favorite recipes!
Creamy One Pot Pasta
Ingredients:
4 Lg garlic cloves, peeled
1 tbsp olive oil or vegetable oil
1/2 small container of grape tomatoes sliced
3 cans chicken broth (14.5 oz, or 5 1/4 cups)
1 lb uncooked penne pasta
2 cups of small broccoli florets
2 medium carrrots, peeled
4 oz reduced-fat cream cheese
salt & pepper to taste
*top with grated fresh parmesan cheese!
Let’s Cook!
Place garlic and a tbsp of oil into a large stockpot. Cook over medium heat until golden brown, stirring often. Remove from heat. Add chicken broth. Return to heat, cover, and bring to a boil. Stir in pasta, cover again and simmer vigorously 8-10 min or until pasta is cooked. Do not drain.
Cut cream cheese into cubes. Add all vegetables, cream cheese, & salt and pepper to the stockpot. Stir until cream cheese is melted and fully incorporated. Reduce heat to medium, cover and cook for 2-4 minutes or until veggies are tender. Sever with grated parmesan cheese!
